Enjoy Hsu's Handmade Noodles and learn about how everything started – in 1986, Master Hsu crafted his first batch of noodles in Shiding. Upholding the spirit of tradition, he perfected over 20 years of craftsmanship through techniques like shaking, pulling, and laying the dough until it formed white strands. This intricate process showcases the handmade culture and craftsmanship, earning frequent awards like the New Taipei Haolii and Taiwan Product Best Design Awards.

- Enjoy a handmade thin noodle DIY experience (approx. 1.5 hours): Follow a dedicated guide through noodle-making instructions, participate in activities like noodle tossing and rope skipping, and create unique handmade noodles yourself. After a brief drying period, take home your very own noodles!
- Join a scallion pancake DIY experience (about 1.5 hours): Enjoy Shiding's natural water quality combined with locally handmade dough. Kids can wear bamboo hats and head to the fields to plant, pull onions, and knead the dough by hand. It’s delicious and fun! Experience New Taipei City's green onion production from planting a seed to cooking it in the pot.
